This “snout-to-tail” dinner series is a sociocultural dining project by Filipino chef Yana Gilbuena that will take over Boheme for two months as part of a test kitchen residency, bringing back the Montrose fave’s popular Test Kitchen Tuesdays. Every week, Gilbuena will introduce a new concept called HAYOP, “animal” in Tagalog, which represents her philosophy of “eating and cooking that involves using every possible part of an animal and thus minimizing waste.”
